“As a member of the local and world communities, we believe that operating a sustainable restaurant business is an inherent responsibility,” says Executive Chef, Bill Fuller. “We have incorporated seasonal ingredients, intelligent sourcing, and local food products into food at all levels of the company. Reduction of resource usage and non-recyclable waste has always been a core element of our business and we continue to strive to consume less. And of course, the livability of the lives of our employees is paramount and we are working to find ways to offer improvements to the rigorous lives of restaurant workers.”

Among its numerous commitments to sustainability, Casbah supports Penn’s Corner Farm Alliance, a farmer-owned cooperative that patronizes local southwestern Pennsylvania farms while providing farm-fresh food directly to restaurants and customers. Purchasing Energy Star equipment and appliances and using only fully recyclable take-out containers that are made from recycled materials is a priority for this big Burrito restaurant. Located at 229 S. Highland Avenue, Casbah is open weekdays for lunch (Monday through Friday between 11:30am and 2:30pm), weekends for brunch (Saturday and Sunday from 11am to 2pm) and seven days a week for dinner (Monday through Thursday 5pm to 10pm; Friday and Saturday 5pm to 11pm; and Sunday from 5pm to 9pm).
